Some of the finest seafood in the world are found in the salt water creeks and rivers surrounding Beaufort. Tiny river shrimp, small sweet oysters, and the succulent blue crab have an important place on Beaufort's tables. Ways with venison and duck, with quail and all the plentiful game birds are well known in Beaufort's kitchens. Steaming pilaus, hot bread on the table three times a day, and sumptuous desserts are traditional. In collecting these recipes, the authors have tried to preserve this heritage, the character and charm of more leisurely days, when cooking was indeed an art.
